Well, it is Food Truck Friday. And today we are getting a taste of Peruvian cuisine. A truck out of Harrison has rolled up to our studios and terrors outside to check it out. Good morning. Good morning. We are bringing the drizzle and this is all to the food truck, Friday. We are back with our friends from that to this Peruvian Latin Fion truck bringing so much flavor, so much color to this Friday. We have the Cilantro Bay with us, Vivian Marquez who makes it all possible. There we go a little, little, little bit. Tell us a little bit about the truck. How you got started? Uh You're a friend of the station. We've, we've had you before, but we love seeing you back with some great items. Hello? Thank you for having me back. We're very happy. Um, so we started in 2018. Uh we started with a food truck. Six years later, we opened up a storefront in Harrison. Yeah, that's new since we've seen you last. Yes, exactly. We have an extensive menu at the Harrison location, but we came here to showcase all of our food, all of our cuisine this is, the storefront is wonderful. And who doesn't love to go out to dinner in a great restaurant. But this is so nice because it comes right to you. Take us through some of the products. Oh, definitely. So, right here we have our beef empanadas. Here we have our famous Lomo fries. This is what got you go on these Lomo fries, put this, put us on the map. It's a traditional Peruvian dish, but we took it. Uh we made it like a street food with uh fries, beef, stir fried onions and tomatoes with a little soy sauce with our signature sauces. These are Lore Tostones. So we're Latin fusion. So this is a little Cuban. My mother in law makes like the best uh pork roast pork. So we have Tostones. We have the pork, the onion salad on top with our sauces. Shout out to the mother in laws. They know what's up. They know. Definitely. And then we also have our boneless fusion wings. It's a Chipotle glaze that is made in house. You can't get it anywhere only at Latus. Oh my goodness. It smells so fantastic. I wish we could like radiate it through the canvas. Yeah. Why don't we have that? I know for you guys. Sauces are such a big deal. Definitely. So these are our signature sauces. The purple one is olive aioli. The yellow one is a yellow pepper sauce. The orange one is also like a ricotta. It's called ricot. It's a hot pepper. And then the green one, the famous one, the green Peruvian Ajit. It's a jalapeno base. Oh, delicious. And that's what just makes all this food really come alive and we're gonna be making something. Baby's gonna be putting me to work in just a few minutes. But cilantro bay, I mean, come on, let's take a Yeah, let's hit him with it. There we go, Lisa. All right, we will send it back to you. We're also gonna tell you where to find them. Great events coming up tonight. We'll talk more about that coming up in our next hour, Lisa. You're gonna have to drag me back upstairs. I'm not leaving this food. Matt, you too. Well, it is time for food truck Friday. And today we are getting a taste of Peruvian cuisine, a truck out of Harrison rolled up to our studios today and terrors outside sampling some of their delicious dishes there. Yeah, I if I could even get my mouth around, it will get to that in just a moment. We are talking a lot to in today, bringing together past and present recipes from grandma. But also the things that kids today that we will love to have coming out of a food truck. Chef Fabian is with us right now. The mastermind behind this amazing Peruvian passion project. Tell us a little bit about how grandma played such a part of this and how your own skills led to this. Yeah. So growing up, my grandmother always, she was a chef. My great grandmother was a chef. We all learned from grandma smelling her food, the aromas of her food, you know, gave me the desire to cook. So that's how I ended up going to culinary school. I cooked with her for many years and then decided to go on my own. I opened up my own food truck and then, and then look, yeah, I mean, all the flavors that you have here comes from ancestors, comes from grandma. And um, and then I put my touch into it. That's why it's Peruvian. But with a fusion. So that's why we call that Latus. Latus. I love it. And the product is unbelievable. We have some of their staple items out here on the table right now. Including I know these are the big ones, these Lomo fries. What makes them different. So this is like since we're a food truck, I wanted to have something that's handheld. So we instead of the traditional ways with white rice, but we just did it on top of crispy fries. And this burger we've had burgers on food truck, Friday. This is a burger. This is a big burger. This is our go to. So this is the Lomo burger. So this is a take on our Lomo fries, but we loaded a burger cheese. So you have that beef stir fry with onions and tomatoes. And then we put our signature sauces on top. Let's talk about the sauces right now. He says that the drizzle is paramount to excellent product coming out of this truck and he's going to let me drizzle. Let's go. Let's go. What am I drizzling with? Now, we're gonna go. So right here we have our truffle mac and cheese with our fusion wings. You're going to drizzle a little bit of the blue cheese on top. All right. Don't be scared. I'm not, I mean, I'm a little scared but, you know, there you go. She's a natural. There you go. Sign me up, roll me out with the truck, but that's not it. I do the orange sauce right on top also. You're gonna do that drizzle also. Right on top. And what is this? That's the ricotta and then we're going to just hit it with the cilantro cilantro. He is known as Cilantro Bay and here's why I hit him with it. Hit him with it. There you go and tell everybody where they can find you. We have the storefront, but we also have a great event coming up tonight. Yeah. So tonight we are going to be at Lions Park in Porchester. There's a concert series. So we'll be there tonight from 630 to 9 p.m. That's a great event. You can also check out on social media. It's going to be a beautiful night for it. Oh, yeah, and a beautiful morning here because of you. Colors great food, a story of family. I mean, this is the truck to taste Lisa. Matt. Oh, delicious, delicious. Cannot wait to taste it later.
