Not just homemade, but handmade pierogi, make Rosa-Ly stand out in Fairfield. Staying true to its cultural roots, the business goes back decades.
Pinching is how they get their pierogi just right. "If you pinch it by hand it's completely different, you can taste it, so we put our hearts into it," staff said.
A small authentic staff can do nearly 400 an hour. They make dough with flour from Poland and serve 20 different kinds of pierogi.
Gregory and Ella Baran bought the business in Irvington almost 20 years ago. "We had some money and we borrowed from friends. Beginning was horrible," they said.
"We both went to that little place in Irvington we saw it and he's like should we get it and we go ok let's try."
Ella's son is now 26 and in charge of the family business in Fairfield. "What was it like all these years watching your parents? How to work hard. It's a lot of work that goes into it," he said.
The business actually goes back to the 1960s in Jersey City. The name comes from the two women who first made pierogi there, Rosa and Lee.
