Chef Giovani, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make Skirt Steak Romania.
Ingredients
1 ea. white onion (sliced)
2 tbs olive oil
2 tbs butter
3 tbs butter
2 tbs flour
1tbs garlic (chopped)
1 tbs parsley (chopped)
¼ tsp black pepper
½ tsp salt
¼ cup red Wine
1 cup beef bone broth
¼ cup gravy master
Directions:
In a sauté pan on high heat add the 2 tbs butter and allow it to melt and come to temperature.
Once the butter is hot, add the onions.
Sauté until a deep color is formed, remove from heat and set aside.
In the same pan add the 3 tbs butter and the flour and cook until a roux is formed.
Add the red wine, bone broth, salt and pepper and whisk until the sauce becomes thick.
Whisk in the gravy master and set aside.
Place the steak in a bowl and season with oil, salt, pepper, parsley and garlic.
Mix well until the steak is fully coated and seasoned.
Place steak on a hot grill pan and cook for 2-3 minutes on each side or until medium rare.
Remove from pan and let rest for 5 minutes.
Cut the steak into manageable portions and slice against the grain.
Plate by shingling the steak on a plate and top with the onions and sauce.
