Ingredients
- 3 thin flank steaks
- ¾ cup pecorino
- 3 tbs garlic (chopped)
- ¾ cup parsley (chopped)
- 3 tbs olive oil
- 6 skewers
Instructions
- Place the steak on a flat surface. Using a meat mallet pound the meat to tenderize and flatten it out and set aside.
- Drizzle each steak with oil, sprinkle with cheese and top with parsley.
- Roll up the meat tightly and set aside.
- On a flat surface place all three rolls of meat making sure that they are set side by side.
- Using skewers, skewer through all three rolls of meat making sure that each skewer is one inch apart.
- Using a knife cut the meat between each skewer.
- Place each skewer on the grill and cook until desired doneness.
