A fresh bowl of handmade pasta for about the price of a fast-food combo? That’s the concept behind Forma Pasta Factory, a Brooklyn-based restaurant offering high-quality dishes without the high-end price tag.
With locations in Fort Greene and Williamsburg, Forma brings an open-kitchen, fast-casual approach to traditional Italian pasta-making. Instead of white tablecloths and waiters, diners watch as chefs roll, cut, and cook fresh pasta daily.
“Every single day, the pasta’s made fresh, every single day sauces are made fresh,” said Amit Rabinovich, chef and co-founder of Forma Pasta Factory. “The only thing we don’t make is the Parmigiano-Reggiano, which we import.”
Most pasta dishes start at $14, with rotating daily specials like house made gnocchi and ravioli for $17.
The restaurant also offers wine service at the table, blending the convenience of fast casual with elements of a sit-down experience.
Forma Pasta Factory is open seven days a week.
