"As a chef, I always knew where my product came from," said Mike Love, the co-owner of the shop. "Basically, coffee roasting is another outlet for culinary. You're producing a product, [then] you're cooking it until it's ready and then serving it to customers."
Love and his wife worked in the restaurant business for around 15 years before they decided they wanted to take the next step in their culinary journey. That step was opening a coffee shop.
"I worked in the back of the house, and she was in the front of the house," he explained. "We kind of decided it was time to pursue something for our own interests, and coffee was that interest. Sure enough, one day we came home when I was in between jobs, and one of our Labradors had drank the coffee, hence 'Coffee Labs.'"
From there, Coffee Labs Roasters took off, with the couple diving into the industry to learn how to produce the best blends possible.
"From there, it was me basically entrenching myself within the coffee industry as a tasting judge," Love said. "[I was] learning as much as I could, meeting as many people as I could and traveling and collecting farmers as family partners."
Twenty-two years later, Love knows all the hard work was worth it.
"When we first opened, we entered into the industry [by saying] we have the best espresso in Westchester," he said. "That's what we truly believed, and our blend was unlike any other coffee that we had tried. At the time, there weren't too many coffee shops to go around…A lot of people were going to 7-Eleven, Starbucks and places like that to get coffee...People have [since] asked us to do tastings for them and explain how we do it...The education is the backbone for your customers to understand what you're doing and why you're doing it."
Coffee Labs Roasters is located at 7 Main St. in Tarrytown. In addition to buying coffee and pastries at the shop, customers can also buy some of Coffee Labs Roasters' canned coffees at stores like DeCicco & Sons and CTown Supermarkets.
Love adds they are also in the process of expanding their roasting facility in Tarrytown, which is planned to start running in the next few months.
