It's Tuesday and that means it's time to check out another spot that makes up the best of New Jersey. And today meteorologist Mike Rizzo is trying out some soul food at corn bread in Maplewood Farm to Soul. That's the model here at cornbread in Maplewood. I'm with the founders, Miss Zadie and Adina. Tell me more about the origin source because this is this place right here is like going into Miss Zadie home. I think if I was to sum it very quick and simple for everyone. I am on a mission to bring Miss Zade passion and her cooking to the world. People in the world need to understand that soul food is an art and she has mastered it. Ok. So what do you make? That's so the masterful, right? You're the mastermind. I make everything I can make anything. Our collard greens, our cabbage, our mac and cheese, our yams, our fried chicken. And I hear that's award winning, right? The, the chicken. We was best fried chicken in Brooklyn last summer. That is awesome. Best corn bread in the whole of New York City. I mean the name is cornbread after. All right, So you must make some killer cornbread. I make some killer cornbread. That's it. Cornbread that anyone would love anyone. Anyone. Here at cornbread in Maplewood, I'm with co founder Adina and we have delicious food here. Tell me what do we have? Oh my God. We have our famous mac and cheese. We have our collard green. Actually, we were voted best fried chicken in Brooklyn last year winning. Yes, we have our shrimp. We're gonna do a shrimp amo next month we have our catfish. This is so popular. So tell me what's the significance of this food? I think for me, whenever I think about soul food or black businesses, I automatically say black business is black history for a very long time. Black business was the fabric of the black community and especially black women. We are the engines that hold our community together and we did it out of our kitchens, we did it out of our living room, our backyard, we did whatever we could to sustain and keep our community going. And I think about the legacy we wanna leave for our community around this food. You said it so well, it's like food but it gives people access to, to spotlighting a beautiful culture dina. We're now in the kitchen with the queen, the chef, Miss Zadie. Tell me more about the concept of freshness that you have here. You know, you were telling me that um freshness is, is key. So tell me more fresh this because there's a vast difference between canned and fresh. All my produce is made fresh every day. We cut up our collard green, we cut up our cabbage, we do fresh rice, we cut up our yams, we cut up our chicken again. Everything is fresh, right? So we, we have, what is this in here? This is our rule. Flyer mac and cheese. OK. Hey, this is our, these are our black eyed peas. This is our turkey wings and here's our collard collard greens. Now, that looks amazing, right? So let me ask you this, Zadie. You said that there is a secret to having something taste good is a secret. First of all, you season your water because of the, you see these huge pots. Once you put your produce in here, you can't season it after you put it there, you can tweak the season, but it's very difficult to season. Once you put this much in a box, she knows herself everybody. And this is the place to check it out. M zadie.
